A real wedding example This setup was used at a wedding. Cheeses were cut and salami roses prepared at home, making assembly at the venue straightforward. The savoury spread was accompanied by additional pies, quiches, sausage rolls and Scotch eggs. The couple also had a station utilised as a dessert station full of cakes, waffles and pancakes, with sauces, toppings and cream. Use the example as inspiration and adapt it to your guests, appetite and budget. You can create a simpler display with fewer extras and still make good use of the cart.

Choose what goes in each pan Each cart has twelve small GN 1/6 pans and one large GN 1/1 pan. Our pans are 10 cm deep. This is our original savoury planning sheet; swap ingredients to suit your celebration. Our original handwritten savoury layout, photographed before the wedding.

The twelve small pans: prosciutto; smoked cheddar; carrot and celery sticks; mixed olives; gherkins; silverskin onions; brie; Milano salami; mozzarella with cherry tomatoes; pepperoni; grapes; and mature cheddar. The large pan: a mixture of sliced breads, olive bread, crackers, flatbreads and breadsticks. Dips and condiments can be placed alongside, with optional garnishes around the display. You do not have to fill every pan to the brim. Plan the amount guests will eat, then arrange each ingredient attractively. Some items need much less space than others. Budget for the grazing spread These approximate food budgets use the quantities below as a planning example for around 50 people having grazing nibbles. They are not a guaranteed serving capacity or a full meal allowance. Adjust for appetites, event length and any other food being served.

The prices above are approximate food budgets for around 50 people having grazing nibbles. Adjust quantities for your guests’ appetites, the length of your event and any other food being served. Wholesale estimates allow for bulk buying through suppliers such as Booker or Brakes. Budget shop estimates allow for shopping at Lidl or similar supermarkets. Prices vary by brand, offers and availability; these are planning estimates rather than supplier quotations. Wholesale costs reflect the quantities used. Buying larger packs may mean a higher initial shopping bill and some ingredients left over. Adding Garnishes to your grazing table You can keep your grazing table simple, or add fruit, herbs and other edible garnishes around the pans. Cucumber, radishes, strawberries, extra grapes and a little rosemary can provide colour without much extra expense. For a more elaborate display, add figs, berries, nuts and dried fruit.

Choose one garnish allowance to suit your budget. These amounts are alternatives, not costs to add together. Grapes served in their own pan are already included in the main food budget. Adding extras for a fuller buffet. For a more substantial spread, supplement the cheeses, meats and breads with gala pie, quiches, sausage rolls and Scotch eggs. These can be prepared or purchased ahead and arranged on serving platters alongside your grazing station.

Choose extras to suit your guests and budget. These items sit on platters beside the cart rather than in the pans, so you can add as much or as little as you like. Your total including grazing station hire: The estimates below include the grazing food, simple garnishes and one grazing station hire for £75 for 24hrs. The fuller buffet option also includes the additional savouries described as above.
